During the destruction of Judea by the Babylonians (this date is debated - either 587 or 607 BCE) the waterworks of Beit Shemesh were sealed and covered, and were not uncovered until 2004. Thus during the first Jewish return, known as the Second Temple period, there was no revival of the city, as opposed to many other places in the vicinity such as Beit Guvrin, Maresha, and others.
The article indicates that modern Beth Shemesh wasn't re-established until 1950. So, I'd guess that the potter's wheel could be older than 587 BCE, which would be older than those other items that are dated in that display.
