We all had actors that were on top of their game for a decade or two and, i dont want to say burn out, but slowed down their careers in the new decade.
for the 00's I have to give the decade too....Russel Crowe.
All of his movies were great in this decade, but the movie that proved how good he is...A Good Year. take that as you will but with all his period movies he has, his character arc in a good year is one of the best he ever done.

More people should see this movie because, at least too me, it shows how good he realy is. Hes great in American Gangster, Gladiator, Beautiful Mind and cinderella man, but those were all period pieces in this one he plays a normal guy. Plus their is a few scenes that he is funny in.
Philip Seymour Hoffman?????
Though I definitely see the Russell Crowe thing. This is a hard one to contemplate.

I can agree with all those choices although I seem to be one of the few people who didn't care for Gladiator.
I'd add Denzel to that list. He doesn't always make the best choices but he's always good in whatever he does.
I'm REALLY liking Chiwetel Ejiofor (Inside Man, Redbelt, Children of Men, etc...) lately. I think in a few years he'll get up to that leading man place that these other guys are in.
I think Colin Ferrel has a chance at getting back to being great again. Haven't seen In Bruges yet but I hear it's great. I think he got lost in his own hype for a little while but seems to be making interesting choices again.
I'd have to put up George Clooney, although I really dig Chiwetel Ejiofor. Here's what he's done since 1999 that you should consider:

I never saw Leatherheads so I can't comment on that, but that list makes a decent case, I think.
