Generally when you are talking about a woman.
The difference between genders, when do you add an "e" at the end for feminine, when you're speaking to a woman, or when a woman is speaking, or when you're speaking about a woman, or all?
It's been fifteen years since my last French class, but if I remember correctly, you add the e (or ette, or whatever) when the subject is female. Ami/amie, for example. If it's an object belonging to the woman, it retains its own gender.

French gender is tricky while there are some words that have an e added to make it feminine it's not always the case. You just have to learn the gender of the word as you go. Some words may not have an e at the end but will still require a "la" to signify the gender.
When talking about a group of people, even if the majority are women, if there are men present the group is then described as masculine.
