So we're having a "Dip-Off" at work today where people are bringing in their favorite hot or cold Dip and everyone gets to vote on the best one. Personally, I LOVE chips n dip and have a strong feeling that some of my Benbo brothers and sisters may as well. For this contest I've prepared what I call "The Phantom Beef Thunder Dip" which is a layer of cream cheese, a layer of chili and a layer of cheeses (heat and serve).

Anyone got a dip recipe they like?

There's a really good cracker dip that is super easy to make. Buy a small jar of the Kraft Old English cheese, and a small jar of Kraft Roca Blue Cheese. Mix them together and add garlic salt to taste. Chop up some pecans and sprinkle them on the top. Let it chill for a few hours and you're good to go. It's probably the best cracker dip I've eaten.

Buffalo Chicken Dip
1 package pre cooked Perdue Chicken Strips (Original flavor)
2 packages 8oz Cream Cheese
1 cup hot sauce
1 cup shredded cheddar

Preheat oven to 350
spread cream cheese evenly in a caserole dish
Cut chicken into bite size pieces
Add hot sauce to chicken
Pour chicken/hot sauce mix on top of cream cheese
Add shredded cheddar on top of chicken/hot sauce mix
Heat in oven for 25-30 min.
Serve as layered dip or mix everything together (I preffer the latter)

White Trash Dip

Equal parts Ranch Dressing, Cream Cheese, and Sour Cream. Sprinkle with shredded cheddar for a little pizazz (optional).

1. 16 oz sour cream
2. 16 oz cottage cheese [Note: if using a very dry cottage cheese, you may need to reduce the amount of Monterey Jack Cheese in order to get a sufficiently moist dip].
3. 16 oz shredded Monterey Jack Cheese
4. one dash Worcestershires sauce
5. 1 teaspoon garlic powder
6. 1/2 bag lipton onion soup mix minus the dried onions (you’ll end up with just under 2 teaspoons of the spices)
7. 3 minced jalapenos minus the seeds
8. 1 and 1/2 bunches of scallions chopped.

Mix the sour cream, cottage cheese and add Worcersterhire sauce, garlic powder, and onion soup mix. Stir.

Add the vegetables and the Monterey Jack cheese.

Refrigerate at least 2 hours; overnight is best.

if you add a layer of Ranch or Blue Cheese dressing to that Buffalo Chicken Dip it's really good as well

Sour cream and a packet of dry Italian dressing seasoning. Boom, it's sounds simple, but go ahead- dip a potato cihp into that.

Lipton Onion Soup mix and some sour cream. Give it some time to set-up and add some diced scallions before you serve! It's awesome!!

Careful, it's addictive:

Black Bean Dip

1 red bell pepper
3/4 cup minced fresh cilantro (about 1 bunch)
3 tablespoons finely chopped red onion (or shallot)
2 Tb lime juice
2 Tb balsamic vinegar
2 Tb hot sauce (smoked Tabasco)
1/2 Tsp ground allspice
1/2 Tsp ground cumin
1/4 Tsp salt
1/4 Tsp black pepper
2 15-oz cans black beans, drained (Bush's seasoned recipe)
1 jalapeno pepper seeded and diced
1 garlic clove, minced
Assorted flour tortillas (spinach, sun-dried tomato, etc.) cut into 8 wedges.

1. Preheat Broiler.

2. Cut bell pepper in half lengthwise, discarding seeds and membranes. Place the bell pepper halves, skin sides up, on a foil-lined baking sheet, and flatten with your hand. Broil for 5 minutes or until blackened. Place pepper in a zip-top plastic bag, and seal. Let stand for 5-10 minutes and peel.

3. Place bell pepper and next 12 ingredients (bell pepper through garlic) in a food processor, and process until smooth. Spoon into a bowl and refrigerate until ready to serve.

Note: you can (and should) prepare bean dip a day ahead to give the flavors time to blend and set. Prepare tortilla wedges as close to serving as possible.

4. Preheat oven to 400 degrees.

5. Arrange tortilla wedges in a single layer on a baking sheet coated with cooking spray. Bake at 400 degrees for 5 minutes or until lightly browned.

Even better than the bean dip:

Chipotle Avocado Dip

2 Avocado
2 Tb Mayo
2 Tb Sour Cream
1 Tb Lime Juice
1 Tb Garlic, minced
2-3 Chipotle Peppers in Adobo, seeded and minced
1/3 cup Red Onion, diced
1/3 cup diced tomato

1 Avocado, roughly diced
1/2 tomato, roughly diced

1. Combine first 8 ingredients (Avocado through diced tomato) and puree until smooth.

2. Stir in final two ingredients.

3. Chill for at least 2 hours.

Note: if you are going to chill overnight, cover with plastic wrap pressed down onto the surface of the dip to keep air from the dip itself.
