My wife is looking for a resource for preperation of different vegetables, not really as a main course, but as a side. Something on what's the best (read: keep vitamins) to cook all sorts of vegetables.

Oh, and wish me luck, I just bought my first tub of TOFU today.

I would guess raw or steaming vegetables is probably best for keeping "vitamins" although the term vitamin is thrown around alot in made-up "science" when it comes to foods (health foods in particular)

EDIT - I'd be willing to bet money that not putting salt and/or butter on your veggies is more important for your health than how you cook them

Good luck with the tofu, I don'tk now if it was the dish I made with it or if I kept too much water in the tofu, but it was grosssssss.

Tofu is one of the most disgusting things that is considered edible.

Good resource. Great description of ingredients with fantastic photos. Some of the dishes are bland (adjustments are easy), but overall this is a sophisticated collection (rose cheesecake -- yum). One of the graces of this book is that it isn't all about "healthy cooking" or "meat substitution", just good vegetarian cooking. And the recipes aren't all complicated.

I've used many of these recipes for years as starting points for my own dishes or as written.

Personally, as side dishes, though, I most often just steam fresh.

it's funny, the wife and I are doing the whole "lifestyle change" And while we are not changing to vegetarian at all, we realized that we needed to add more vegies to the diet. And the thing is, we both have no clue on how to prepare them at all. (I mean besides the obvious like corn and green beans) We're also looking for vegie dishes that we can add grilled chicken to.

try foodnetwork.com, allrecipes.com and maybe try googling vegetable recipes.

yeah, and one would think the fact that it comes in a tub would be a warning sign.
