Pretty much a vegetarian. I maybe eat meat once every week or two. I've been trying to eat only what we make ourselves as much as possible. Luckily we have a giganto-garden. I'll have my own hand raised cabrito in about a year and will be able to eat some of our chickens after they stop laying in about two.

Was the switchover cold turkey or did you do it in gradual changes?Gradual. I started replacing meats with meat substitutes. Along the way, I discovered new foods (not necessarily substitutes) that I never knew about or tried before.

I eat a lot of beans of all varieties and our chickens' eggs, mostly. People often eat a lot more protein than is necessary.

Same here, I was big into Boca for a while, but now I rarely eat substitutes. In the Year and couple months that I've been 95% veggie, I've seen my triglyceride levels drop from the mid 200s to exactly 100. My cholesterol has dropped from 224 to 146.
I subscribe to Vegetarian Times magazine and try a least 3 recipes out of each issue. Some stay in the rotation, some don't.

I've been vegetarian for about ten years now, and am eagerly anticipating being the first man in my family to not die of a heart attack by age 60. yay!
