Recommend me some good music with piano being the main insturment. No Ben Folds, Tori Amos, Elton John, or Billy Joel.

Keith Jarrett.
His son is one of my best friends, I grew up playing in bands with him. Name dropping!
Anyway, Keith Jarrett, Herbie Hancock, Chick Corea, Bruce Hornsby, Traffic.

I'm not sure I really understand the question. Do you just want popular music or are jazz and classical okay?

If you're looking for blues piano - Henry Butler and Corey Harris "Vu-Du Menz" is fantastic piano work; also check out Henry Butler's solo work like "Blues After Sunset". Other artists - Professor LongHair, Sunnyland Slim, Pinetop Perkins, Otis Spann and Johnnie Johnson.
Don't forget Jellyroll morton. :)

You can't have a discussion about piano players (or composers) without mentioning Thelonious Monk!
